A Yummy Crockpot Recipe: Italian Meatloaf

Ugh, is it still winter?
I’m so over wearing 15 layers of clothes.

And snow. I’m so over snow.
NO MORE SNOW!

Actually, maybe one more snow day would be nice. But that’s it and then I want spring to race on in here and warm the place up!

Since it is still so chilly outside, I wanted to share with you one of our favorite winter crockpot meals. The recipe was given to me by my boss and his fabulous wife, so I pretty much think of them every time I make it {thanks Ward and Amanda!!}

meatloaf recipeIngredients for Italian Meatloaf:

  • 2 lbs “Meatloaf Mix” (1/3 ground chuck, 1/3 ground veal, 1/3 ground pork)*
  • 2 eggs beaten
  • 2/3 cup quick cooking oats
  • 1 envelope dry onion soup mix
  • 1/2 cup pasta sauce
  • 1 tsp garlic powder
  • Onion slices

Step 1: In your crockpot, combine ground beef, eggs, oats, soup mix, pasta sauce, and garlic powder. Shape into loaf.

Step 2: Garnish top of loaf with onion slices.

Step 3: Cook on low for 8 hours.

That’s it! It’s super simple and so incredibly tasty. For our family of three, the meatloaf lasts for two dinners and a lunch. The best part is that the reheated, “leftover” meatloaf tastes just as good as the first day you cook it!

*If your store doesn’t have Meatloaf Mix in the ground beef section you can also use just ground beef. I just find the mix more flavorful and juicy.

  1. This sounds yummy!! We are always looking for crock pot meals that aren’t stew or a stew texture. Although I love pot roast and beef stew and chicken and dumplings, the texture gets really boring after awhile 🙂 Thanks gir!

  2. What if we got ACTUAL snow? As in, somewhere around a foot. If it’s going to be in the 20s, I WANT SNOW. Otherwise, it’s just cold for no reason.

    Meatloaf + peas + mashed potatoes = nostalgia. I’ve never made meatloaf in a crockpot, but what a good idea. I want to see an ‘after’ picture!

    1. I meant to take an “after” picture last night, but by time Travis and Jack got home + the mad dash for dinner + the mad dash for bath time and bedtime + cleaning up the mess.. well, it never happened!

      I’d be good with some actual snow, but just ONE time before spring and that’s IT!
