What do you eat for lunch?

With the summer ending, it is the perfect time for me to get back on track with packing lunches. Not only Jack’s, but my own! I’ve fallen out of the habit of preparing all my lunches at the beginning of the week and I need to get back to it.

It’s difficult though because I’m not really a sandwich person. Sandwiches are totally ‘work lunch’ food, right? I want something where I can make three servings on Monday’s and then pack that up for my Tuesday, Wednesday and Thursday office days.

Sooo… what do you eat? Are you sautéed chicken and veggies kinda person? Do you make rice bowls? Do you just give up and grab a fast food burger?

  1. I’m right there with you! I hate lunch meat. The only sandwiches I pack are sometimes chicken salad or maybe leftover hamburgers. I do too many salads (mason jars keep them fresh all week so I make them in bulk on Sundays), but try to top them with well-seasoned protein to keep things interesting. I make my own versions of the Starbucks protein bentos, and often bring leftovers from dinner the night before. My doctor said I need more potassium, so sometimes on Sunday I’ll make a batch of this to take for lunches…not great for the waistline, though: https://cakescottage.com/2016/02/29/loaded-baked-chicken-potato-casserole/ Or I’ll combine smoked sausage, green beans, and potatoes with some veggie broth and “magic chicken” seasoning in a crock pot.

    I LOVE it. I usually bring leftovers for lunch, and this thing heats them perfectly, I don’t have to stand in line at the microwave, and it’s so cute! My only complaint is that things like soup need to be brought in a separate container and transferred once I get to work, but on the whole I love it. My turkey meatloaf and mashed potatoes are heating right now! (And there’s little to no smell until you open the warmer, either – so you won’t stink up the office/make your coworkers jealous of your delicious warm lunch).

  3. some sort of noodle with veggie and peanut sauce. There are a lot of recipes for variations. I like it cause you can enjoy it cold and sub in meat and veggies that you have on hand.

  4. I usually make something I can eat with a fork/spoon. My favorites right now are burrito bowls, and Greek bowls (olives, feta, sweet potato fries, tatziki, etc). Sometimes I bring a sweet potato and top it work beans, salsa, and cheese. In the winter I do chili. I’ve found bringing a fresh element that I add when it’s time to eat makes a big difference- chopped cilantro, squeeze of fresh lemon, something like thatm I’m looking forward to reading the comments on this entry because I’m always looking for more easy, healthy ideas.
